- 1 lb Pasta (I recommend bowtie or orzo)
- ½ cup Olive Oil
- 2 pints Cherry Tomatoes (around 20–25 oz)
- 1 8 oz block Feta Cheese
- 4 cloves Garlic finely chopped
- 2 pinches Red Pepper Flakes
- 1 handful Fresh Basil Leaves
- Kosher Salt and Fresh Cracked Pepper
- Balsamic Glaze (if the tomatoes are too sour)
Instructions
- Heat your oven to 400 degrees and combine cherry tomatoes, olive oil, and salt in a baking dish.
- Place the feta block in the center, drizzle with extra olive oil, and sprinkle red pepper flakes over it before baking for 30 minutes.
- While baking, cook the bowtie pasta until just tender then drain, keeping some pasta water aside.
- Increase oven temperature to 450 degrees and continue baking for another 5 to 10 minutes until the feta and tomatoes develop a golden brown color.
- Remove from oven, quickly stir in the chopped garlic and fresh basil to soften the garlic flavor.
- Toss the pasta with the tomato and feta mixture, season with salt and pepper, and add reserved pasta water if needed to loosen the sauce.
Notes
- If possible, use a small baking dish so the tomatoes touch each other
- Add ½ cup pasta water if the sauce seems dry after cooking
