Description

This Paleo Easy Vegetable Scramble is perfect for a thyroid health breakfast and supports Hashimotos with wholesome ingredients. It’s an anti inflammatory scramble that’s quick, simple, and ideal as a paleo breakfast recipe.


Ingredients

  • 2 tablespoons coconut oil
  • 3 cups butternut squash diced
  • 3 cups red cabbage chopped
  • ½ cup green onions chopped
  • 1 teaspoon sea salt or more to taste

Instructions

  1. Heat coconut oil in a large skillet over medium heat until melted.
  2. Add the diced butternut squash and chopped red cabbage along with the salt, then cover and let everything cook gently for 15 minutes, stirring now and then.
  3. Taste and add more salt if needed.
  4. Just before serving, sprinkle chopped green onions on top.
