- 8 lasagna noodles
- 2 cups cooked chicken shredded
- 1 cup ricotta cheese
- 1 cup grated Parmesan cheese divided
- 1 cup shredded mozzarella cheese
- 2 cloves garlic minced
- 1 egg
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- 2 cups marinara sauce
- Fresh parsley chopped for garnish
Instructions
- Heat your oven to 375°F 190°C.
- Boil the lasagna noodles following the package guidelines until they are firm. Drain and lay them flat to avoid sticking.
- Mix shredded chicken with ricotta cheese, half the Parmesan cheese, minced garlic, egg, Italian seasoning, salt, and pepper in a large bowl.
- Coat each noodle with the chicken filling and roll them tightly.
- Spread marinara sauce over the base of a 9×13 inch baking dish.
- Arrange the roll-ups seam side down in the dish and pour the remaining marinara sauce on top.
- Sprinkle mozzarella and remaining Parmesan evenly.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and continue baking for 10 more minutes until cheese melts and browns.
- Garnish with parsley before serving.
