- 4 boneless skinless chicken breasts about 6–8 ounces each
- 1 ½ cups finely grated Parmesan cheese
- 1 cup Panko bread crumbs
- ½ cup all-purpose flour
- 2 large eggs lightly beaten
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried Italian herbs
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
- 3 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 tablespoons chopped fresh parsley optional
- lemon wedges for serving optional
Instructions
- Preheat oven to 400°F 200°C.
- Mix Parmesan cheese Panko bread crumbs garlic powder onion powder dried Italian herbs salt and pepper in a shallow dish.
- Place flour in another shallow dish and eggs in a third shallow dish.
- Dredge each chicken breast in flour then dip into eggs then coat with Parmesan mixture pressing firmly.
- Heat olive oil and butter in a large ovenproof skillet over medium heat.
- Cook chicken breasts until golden crispy about 3-4 minutes per side.
- Transfer skillet to oven and bake until chicken is cooked through about 15-20 minutes.
- Garnish with fresh parsley and serve with lemon wedges if desired.

- For extra crispiness use freshly grated Parmesan and Panko crumbs
