Description

Pineapple Cucumber Salad is a fresh salad that’s perfect for easy dinner and weeknight meal planning. This quick side dish combines vibrant flavors with simple ingredients for a family dinner everyone will love.


Ingredients

  • 2 cups fresh pineapple diced
  • 1 large English cucumber diced or 2 Persian cucumbers
  • ¼ small red onion thinly sliced
  • ¼ cup fresh cilantro chopped
  • 1 small jalapeño thinly sliced optional for spice
  • ¼ cup crumbled feta cheese optional for a salty contrast
  • 2 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp red pepper flakes optional for heat

Instructions

  1. Cut the pineapple into small chunks and slice the cucumber into half-moon shapes or cubes.
  2. Thinly slice the red onion and jalapeño if using, then chop the cilantro and crumble the feta cheese if desired.
  3. Mix the lime juice, honey, olive oil, salt, black pepper, and red pepper flakes in a bowl to create the dressing.
  4. Combine the pineapple, cucumber, red onion, cilantro, and jalapeño in a large bowl and pour the dressing over the salad. Toss gently to combine.
  5. Add the crumbled feta cheese on top if using, then serve right away or chill for 15 to 30 minutes to enhance the flavors. Garnish with extra cilantro or a splash of lime juice before serving.
