- 5 cups chicken breasts cooked and cubed or shredded
- 1 cup sour cream
- 2 (10.75 ounce cans) condensed cream of chicken soup
- 2 cups crushed Ritz crackers about 1 1/2 rolls of crackers
- 1/2 cup butter melted
- 1 Tablespoon poppy seeds optional
- optional 2 cups cooked rice
Instructions
- Preheat oven to 350°F (175°C).
- Mix chicken, sour cream, and cream of chicken soup in a bowl.
- Spread mixture evenly in a greased casserole dish.
- In a small bowl, combine crushed crackers, melted butter, and poppy seeds.
- Sprinkle cracker mixture evenly over chicken mixture.
- Bake uncovered for 30 minutes or until bubbly and golden brown on top.
- Serve warm, optionally over cooked rice.
Notes
- For extra flavor, add chopped onions or a pinch of black pepper
- Using cooked rice makes the meal heartier
