- 1 medium onion finely chopped
- 2 cloves garlic minced
- 1 medium carrot diced small
- 1 stalk celery diced
- 4 cups vegetable broth
- 1 cup full-fat coconut milk
Instructions
- Peel and cube the pumpkin.
- Finely chop the onion and mince the garlic.
- Dice the carrot and celery.
- In a large pot, sauté the onion and garlic until fragrant.
- Add the carrot, celery, and pumpkin cubes and cook for a few minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer until the pumpkin is tender, about 20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the coconut milk and heat through.
- Serve warm.
