- 1 packet (2 ¼ tsp) active dry yeast
- ¼ cup granulated sugar
- ½ tsp salt
- ½ cup warm milk (about 110°F)
- 4 tbsp unsalted butter softened
- 2 large eggs at room temperature
- 1 tsp vanilla extract
- 1 tsp lemon zest optional for a bright flavor
- 1 cup raspberry preserves or jam
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tbsp butter melted for brushing
- ¾ cup powdered sugar
- 1–2 tbsp lemon juice
- 1 tbsp milk or cream
Instructions
- In a bowl combine warm milk yeast and a pinch of sugar; let sit 5 minutes until frothy.
- In a large bowl mix flour sugar and salt.
- Add eggs vanilla and lemon zest to yeast mixture and stir.
- Slowly add wet ingredients to dry combining to form dough.
- Knead dough with softened butter until smooth and elastic about 10 minutes.
- Cover dough and let rise in warm place until doubled about 1 hour.
- Prepare raspberry filling by mixing preserves cornstarch and water in a saucepan; cook over medium heat until thickened then cool.
- Roll out dough into rectangle spread raspberry filling leaving edges clear.
- Roll the dough tightly into a log then place seam side down in a greased loaf pan.
- Cover and let rise 30 minutes.
- Preheat oven to 350°F (175°C).
- Brush dough with melted butter.
- Bake for 30-35 minutes until golden and cooked through.
- Mix powdered sugar lemon juice and milk for glaze and drizzle over warm loaf before serving.
