- 2 cups 240g all-purpose flour be sure to measure properly
- ¼ cup 24g unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup 113g unsalted butter softened to room temperature
- 1 cup 200g granulated sugar
- 1 large egg at room temperature
- 2 teaspoons vanilla extract
- 1 Tablespoon 15mL red food coloring1
- 4 ounces 113g full fat block cream cheese softened to room temperature
- ¼ cup 57g unsalted butter softened to room temperature
- 1 and ¾ cup 210g powdered sugar
- 1 teaspoon vanilla extract
- pinch of salt
Instructions
- Preheat the oven to 350ºF 177ºC and line a large baking sheet with parchment paper or a silicone baking mat.
- Whisk together flour, baking soda, salt, and cocoa powder in a medium bowl.
- Cream butter and granulated sugar until light and fluffy using a mixer, then add egg and beat again.
- Add vanilla and red food coloring and beat on medium speed, scraping sides to combine evenly.
- Add flour mixture slowly on low speed until dough forms and is crumbly, then use hands to bring dough together.
- Scoop dough into balls, roll smooth, flatten slightly, and bake on prepared sheet for 10-11 minutes until puffed and edges are set.
- Cool on baking sheet 5 minutes, then transfer to wire rack to cool completely before frosting.
- Prepare cream cheese frosting by mixing cream cheese and butter until smooth, then add powdered sugar, vanilla extract, and pinch of salt.
- Frost cooled cookies as desired.

- For crisp tops, broil 2–3 minutes at the end
