- 1 head garlic
- 1 tsp olive oil
- 2 pounds red potatoes washed and cut into quarters
- kosher salt
- 6 tablespoons butter
- 3/4 cup half and half
- fresh ground pepper
Instructions
- Prepare the garlic by slicing off the top quarter inch and wrapping it in foil after drizzling olive oil on it, then roast at 375 degrees F for about one hour until soft and golden.
- In a large pot, cover the quartered potatoes with cold water, add one teaspoon of salt, and boil until tender, about 15 minutes.
- Drain the potatoes and return them to the pot with the roasted garlic cloves.
- Warm the half and half with the butter until the butter melts, then add this mixture along with salt and pepper to the potatoes.
- Mash everything together until creamy but still a bit lumpy, then garnish with fresh herbs and extra butter before serving.
