- Milk 1 1/2 cups
- Large Eggs 2
- Butter (melted) 2 tablespoons
- Salt 1/4 teaspoon
- Cooking Spray or Butter For greasing the pan
- Cheddar Cheese (shredded) 1 cup
- Spinach (fresh or sautéed) 1 cup
- Eggs (scrambled) 4
- Tomatoes (diced) 1/2 cup
- Chives (chopped) 2 tablespoons
Instructions
- Warm a non-stick skillet on medium heat while preparing the batter.
- Blend the flour, milk, eggs, melted butter, and salt until the batter is smooth, then let it rest for at least 30 minutes.
- Grease the skillet lightly with butter or cooking spray.
- Pour 1/4 cup of batter into the skillet and tilt to spread evenly. Cook for 1 to 2 minutes until edges lift, then flip and cook the other side for 1 more minute.
- Move cooked crepes to a plate and place parchment paper between each. Repeat with the remaining batter.
- Fill each crepe with scrambled eggs, sautéed spinach, shredded cheese, and diced tomatoes, folding or rolling gently.
- Sprinkle chopped chives on top and serve warm, optionally adding sour cream or hot sauce.
