Description

Sheet Pan Lemon Balsamic Chicken is a quick and flavorful recipe ideal for a family dinner or a simple weeknight meal. This easy dinner combines tender chicken with a bright lemon balsamic sauce, making it a delicious lemon chicken recipe and perfect sheet pan chicken dish.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 lb baby potatoes halved
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat your oven to 400°F (200°C).
  2. In a mixing bowl, blend balsamic vinegar, olive oil, honey, garlic, oregano, salt, and pepper until well combined.
  3. Put the chicken breasts and potatoes into a resealable bag or bowl, add the marinade, seal, and refrigerate for no less than 30 minutes.
  4. Lay out the marinated chicken and potatoes evenly on a sheet pan.
  5. Roast in the oven for 25-30 minutes until the chicken is thoroughly cooked and the potatoes are soft.
  6. Sprinkle chopped fresh parsley on top before serving.
