Slow Cooker Beef and Broccoli Easy Weeknight Dinner

Description

Slow cooker beef and broccoli makes an easy dinner packed with tender beef and fresh broccoli in a savory sauce. Perfect for a weeknight meal or family dinner, this recipe fits well into beef recipes and slow cooker recipes.


Ingredients

  • 1.5 lbs boneless beef chuck roast cut into 1/4 inch strips against the grain
  • 1 cup low-sodium beef broth
  • 0.5 cup low-sodium soy sauce
  • 0.33 cup dark brown sugar reduce to 1/4 cup for less sweetness
  • 1 tbsp sesame oil
  • 3 tsp minced garlic about 3 fresh cloves
  • 2 tbsp cornstarch
  • 12 oz frozen broccoli florets about 3 cups

Instructions

  1. Combine beef broth, soy sauce, brown sugar, sesame oil, and minced garlic in a bowl and mix until smooth.
  2. Place beef strips in the slow cooker and pour the sauce over, mixing to cover all pieces.
  3. Cook the meat on LOW heat for about 2 and a half to 3 and a half hours.
  4. An hour before finishing, mix cornstarch with a quarter cup of cooking liquid then stir it back into the slow cooker slowly.
  5. When only 30 minutes remain, add frozen broccoli and stir to mix, then cover and finish cooking.
  6. For softer broccoli, add it earlier with 45 to 60 minutes left in cooking.
  7. Garnish with green onions and sesame seeds if you like, and serve warm over rice.

Notes

  • Pro tip: Brown the beef in a skillet for 4 to 5 minutes before slow cooking for extra flavor
  • Reduce total cook time by about 1 hour
  • For spicy version, add 1/2 tsp red pepper flakes to the sauce
