Description

Slow Cooker Butter Chicken and Veggies offers a cozy one-pot meal with tender chicken and vibrant vegetables. This easy recipe blends the convenience of a Crockpot Butter Chicken with the wholesome goodness of Healthy Slow Cooker Chicken Curry for a satisfying dinner.


Ingredients

  • 1 1/2 lbs boneless skinless chicken tenders
  • 1 lb baby carrots
  • 1 1/2 lbs Yukon gold potatoes cut into wedges
  • 1/2 cup salted butter melted
  • 1 Tbsp minced garlic
  • Salt and pepper to taste
  • 1 tsp dried thyme leaves
  • 1 tsp dried parsley

Instructions

  1. Arrange the chicken in the middle of the slow cooker and place the potato wedges on one side with baby carrots on the opposite side.
  2. In a separate bowl, whisk together the melted butter, minced garlic, salt, pepper, thyme, and parsley until thoroughly combined.
  3. Drizzle the garlic butter mixture evenly over the chicken and vegetables.
  4. Cover the cooker and set to HIGH for 4 hours or LOW for 6 to 8 hours.
  5. Once finished, serve the dish warm with your preferred sides.
