Souper Creamy Broccoli Cheddar Chicken Rice is a comforting one pot meal, perfect for busy night dinners. This easy dinner comes together quickly, making it ideal for family dinners and weeknight meals.

- 1 tbsp extra virgin olive oil
- kosher salt and black pepper
- ½–1 lb boneless chicken breasts cut into cubes
- 1 yellow onion chopped
- 2 tbsp salted butter
- 2 tbsp fresh thyme leaves
- ½ tsp garlic powder
- ½ tsp paprika
- ¼ tsp cayenne pepper or to taste
- 1 ½ cup basmati rice
- ½ cup dry broken spaghetti or orzo
- 3 cup low sodium chicken broth
- 3 cup broccoli florets roughly chopped
- ¾ cup whole milk or milk of choice
- 1 cup shredded cheddar cheese
Instructions
- Heat olive oil in a large pot over medium heat and add the cubed chicken and chopped onion. Cook until they release a nice aroma, about 5 minutes, and season with salt and pepper.
- Stir in the butter, fresh thyme, garlic powder, paprika, and cayenne pepper. Add the rice and pasta, and continue cooking for 2 to 3 minutes, stirring until they are lightly toasted.
- Pour in the chicken broth and raise the heat to high to bring it to a boil. Mix in the broccoli florets and season with a good pinch of salt and pepper. Cover the pot, reduce the heat to low, and let it simmer for 20 to 25 minutes until the rice is almost done.
- Once the rice is cooked through, stir in the milk and top with shredded cheddar cheese. Remove from heat and mix everything until the dish turns creamy. Serve warm, garnished with extra thyme and ground black pepper if desired.
