Description
This sour cream beef noodle casserole is a creamy beef noodle bake perfect for weeknight dinners. It layers seasoned ground beef with tender egg noodles and a rich sour cream mixture for a comforting ground beef noodle casserole everyone will enjoy.

- 1 lb lean ground beef
- 1/2 yellow onion chopped
- 2 cloves garlic minced
- 2 15 oz cans tomato sauce
- 1 teaspoon Italian seasoning
- 8 oz egg noodles
- 1 cup sour cream
- 1 cup cottage cheese
- 1 cup cheddar cheese grated
- Kosher salt and freshly ground black pepper to taste
Instructions
- Heat your oven to 350°F and coat a 9×13 inch baking pan with nonstick spray.
- Brown the ground beef and onion in a large skillet over medium-high until fully cooked, about 10 minutes. Add garlic and cook for 1 more minute.
- Mix in tomato sauce and Italian seasoning then simmer for 5 minutes, stirring occasionally and seasoning with salt and pepper. Remove from heat.
- Meanwhile, boil egg noodles in salted water until tender according to package directions. Drain well.
- Combine sour cream and cottage cheese in a bowl then stir in the cooked noodles, seasoning with salt and pepper.
- Layer half the noodle mixture in the baking dish, then cover with half the meat sauce. Repeat these layers.
- Sprinkle the grated cheddar cheese evenly on top and bake for about 30 minutes until bubbly and melted.
- Allow the casserole to rest for 10 minutes before serving.
Notes
- For crisp tops, broil 2–3 minutes at the end
