- 1 lb Strawberries halled and sliced
- 1 teaspoon Balsamic Vinegar
- 2 teaspoons sugar
- 8 oz strong espresso
- 1 teaspoon vanilla
- 1 teaspoon rum flavoring
- ½ cup sugar
- 1 cup heavy whipping cream
- 2 tablespoons sugar
- 4 Tort Wafers
- 1 lb Strawberries hulled
- ¼ cup rose preserves
- 1 cup mascarpone
- ½ cup Nutella
- 2 tablespoons cocoa
Instructions
- Quarter half of the strawberries and combine them with balsamic vinegar and sugar in a bowl, then refrigerate.
- Brew strong espresso using a moka pot, then mix it with sugar, vanilla, and rum flavoring; cool to room temperature.
- Blend mascarpone with half of the espresso mixture using a stand mixer.
- Place one wafer on a plate and spread Nutella to the edges.
- Top with a second wafer and press firmly.
- Spread rose preserves evenly over the wafer and place another wafer on top pressing down firmly.
- Spread the mascarpone mixture on that wafer, then arrange the marinated strawberries in a circular pattern over it.
- Add another wafer on top gently to avoid squishing the strawberries and spread the remaining espresso mixture over it.
- Refrigerate the cake for at least four hours to set.
- Whip the heavy cream with sugar just before serving.
- Use a piping bag with a star nozzle to pipe whipped cream around the cake edges, add whole strawberries in the center, and pipe more whipped cream decoratively.
- Dust the top with cocoa powder and serve.
