- 500g bread flour
- 350ml water room temperature
- 100g active sourdough starter
- 10g salt
- 1 cup fresh blueberries
- 1/3 cup cream cheese softened
- Zest of 1 lemon
- 2 tablespoons granulated sugar
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
Instructions
- In a large bowl combine bread flour water and sourdough starter.
- Mix until a shaggy dough forms.
- Add salt sugar and lemon zest then knead until smooth.
- Cover and let rise for 4 hours folding every hour.
- Gently fold in blueberries cream cheese and honey.
- Shape the dough into a loaf and place in a proofing basket.
- Let proof for 2 hours then preheat oven to 230°C.
- Bake for 40 minutes with steam then remove steam and bake 10 minutes more.
- Cool completely before slicing.

- Use room temperature water to help activate the starter
- Incorporate add-ins gently to avoid losing dough structure
- Let the bread cool fully to enhance flavor and texture
