Description

A soft and flavorful sourdough bread recipe that combines natural tang with a hint of sweetness, perfect for sandwiches or breakfast.


Ingredients

Scale
  • 500g bread flour
  • 350ml water room temperature
  • 100g active sourdough starter
  • 10g salt
  • 1 cup fresh blueberries
  • 1/3 cup cream cheese softened
  • Zest of 1 lemon
  • 2 tablespoons granulated sugar
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice

Instructions

  1. In a large bowl combine bread flour water and sourdough starter.
  2. Mix until a shaggy dough forms.
  3. Add salt sugar and lemon zest then knead until smooth.
  4. Cover and let rise for 4 hours folding every hour.
  5. Gently fold in blueberries cream cheese and honey.
  6. Shape the dough into a loaf and place in a proofing basket.
  7. Let proof for 2 hours then preheat oven to 230°C.
  8. Bake for 40 minutes with steam then remove steam and bake 10 minutes more.
  9. Cool completely before slicing.

  • Use room temperature water to help activate the starter
  • Incorporate add-ins gently to avoid losing dough structure
