Description

Enjoy a delicious Taco Bell Chicken Quesadilla made right at home with this easy recipe. This flavorful dish features melted cheese and a homemade jalapeño sauce for an authentic touch. Perfect for quick meals and family dinners.


Ingredients

  • 1/2 cup 125 ml mayonnaise
  • 1/2 cup 125 ml sour cream
  • 3 tbsp 45 ml pickled jalapeno juice from the pickled jalapenos
  • 3 tbsp 15 g pickled jalapenos minced
  • 1 clove garlic or 1 tsp garlic powder
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne powder
  • Salt and pepper to taste
  • 8 medium flour tortillas
  • 4 cups 800 g shredded rotisserie chicken
  • 4 cups 460 g shredded cheese blend Monterey Jack American Cheese and Mozzarella recommended

Instructions

  1. Combine mayonnaise sour cream pickled jalapeno juice pickled jalapenos garlic cumin smoked paprika cayenne salt and pepper in a small bowl mixing well until smooth. Adjust seasonings to taste if needed.
  2. Shred the chicken using forks or your hands then stir with some or all of the jalapeno sauce until coated and creamy. Reserve extra sauce for dipping.
  3. Heat a skillet on medium then place one tortilla in it add cheese chicken more cheese and a second tortilla on top. Cook around 1 minute until the bottom is golden then flip and cook 30 to 60 seconds more. Repeat for remaining tortillas.
  4. Cut each quesadilla into wedges and serve while hot. Enjoy your meal!

Notes

  • *To Cook Your Own Chicken: if using rotisserie or leftover chicken skip this note
  • To cook fresh chicken, heat 1 tbsp butter or oil in a skillet on medium-high, add 1 lb 450 g boneless skinless chicken seasoned with 1 1/2 tsp paprika 1 tsp cumin 1/4 tsp dried oregano salt and pepper
  • Cook 5-6 minutes, flip, then cook 2-3 minutes more until done
  • Make ahead is not recommended as quesadillas are best served hot with melty cheese
  • Store leftovers in the fridge 1-2 days and reheat in a skillet over medium heat if needed
