- 250g Sponge Fingers (Lady Fingers)
- 1 tablespoon cocoa powder for dressing
- 1.5 tsp of boiled water mix with 1 tbsp of coffee
- 3 tbsp caster Sugar
- 250g mascarpone cheese
- 250ml thickened cream whipped
- 1.5 tsp of boiled water mix with 1 tbsp of coffee
- 1 cup Milk
Instructions
- Use an electric beater to whip together the sugar, mascarpone, and cream until the mixture is thick and smooth. Then blend in the coffee flavouring thoroughly.
- Quickly soak the biscuits in the coffee milk mixture then arrange them on a tray. Place a spoonful of the cream mixture in the bottom of each glass and layer in the biscuit pieces, topping with more cream. Repeat layering three times for all glasses.
- Dust cocoa powder evenly over the top of each dessert, wipe the glass edges clean, cover tightly with plastic wrap, and refrigerate overnight. Best served the following day.
