Description

Turkey Cheddar Lunch Roll Ups are a simple recipe perfect for an easy dinner or a quick weeknight meal. This family favorite features fresh ingredients and makes great lunch ideas that come together in minutes.


Ingredients

  • 8 large flour tortillas 10-inch burrito size recommended
  • 0.5 cup mayonnaise full-fat preferred
  • 1 tbsp Dijon mustard
  • 1 lb sliced deli turkey medium-thin sliced
  • 8 slices cheddar cheese sharp cheddar recommended
  • 1 cup fresh spinach leaves stems removed patted completely dry
  • 0.5 cup shredded carrots pre-shredded works well
  • 0.5 cup red bell pepper sliced into thin strips

Instructions

  1. Lay all flour tortillas flat on a clean surface at room temperature.
  2. In a small bowl, whisk together mayonnaise and Dijon mustard until smooth and creamy.
  3. Spread a thin, even layer of the mayo mixture over each tortilla leaving a small border at the edges.
  4. Place 2 to 3 slices of deli turkey on the bottom two-thirds of each tortilla and top with one slice of cheddar cheese.
  5. Add fresh spinach leaves in a single layer over the cheese, followed by evenly distributing shredded carrots and red bell pepper strips.
  6. Roll up each tortilla tightly from the filled end, tucking in the sides as you roll.
  7. Wrap the roll-ups in plastic wrap and refrigerate for at least 30 minutes to firm up.
  8. Unwrap and cut each roll-up diagonally in half with a serrated knife before serving or packing.

  • Store wrapped roll-ups in the refrigerator for up to 3 days
  • For best results slice fresh just before serving
  • You can swap turkey for ham or roast beef or try pepper jack cheese for a spicy twist
