- 1 pound lean ground beef (I use 90%) (or use turkey chicken or lamb!)
- ½ medium white onion finely diced
- 1 teaspoon kosher salt
- Freshly ground black pepper
- 1 teaspoon sweet paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon mild curry powder
- 1 pound pasta of choice (I like shellbows)
- 2 cups whole-milk or 2% plain Greek yogurt
- 2 garlic cloves grated
- ¼ teaspoon kosher salt plus more to taste
- 4 tablespoons salted butter
- ½ teaspoon sweet paprika
- 1 cup cherry tomatoes halved
- Fresh chopped parsley and dill
Instructions
- Heat a large skillet on medium-high and add the ground beef, breaking it up as it cooks. Sprinkle in kosher salt, black pepper, sweet paprika, garlic powder, onion powder, and curry powder evenly over the meat while stirring. Then stir in the diced onion and cook the mixture until the beef is golden brown and the fat has rendered, about 15 minutes. Remove from heat and keep warm.
- While the meat cooks, bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente. Drain and return to the pot.
- In a medium bowl, combine the Greek yogurt, grated garlic, and salt. Stir well and adjust seasoning to taste.
- Melt the butter in a small saucepan over medium heat, then whisk in sweet paprika and cook for 20 to 30 seconds. Remove from heat.
- To serve, place warm pasta in shallow bowls, spoon over the garlic yogurt sauce, then the cooked beef. Add halved cherry tomatoes and sprinkle with parsley and dill. Drizzle the paprika butter sauce on top before serving.
Notes
- *Please note that if you are using something other than ground beef I suggest adding 1 tablespoon of olive oil to the pan before cooking
