A hearty and healthy Tuscan white bean soup that’s easy to make, packed with flavorful ingredients and perfect for a comforting meal any day.

- 1 pound mild Italian sausage
- 1 large yellow onion diced about 1 ½ cups
- 3 ribs celery diced
- 2 large carrots sliced into rounds
- 2 teaspoons garlic minced
- 1 tablespoon tomato paste
- 1 teaspoon Italian seasoning
- ½ teaspoon crushed red pepper
- ½ teaspoon ground black pepper
- 4 cups 32 ounces chicken broth
- 2 cans 15.5 ounces each Great Northern beans drained and rinsed
- 2 cups 60 g fresh baby spinach
- ½ cup 119 g heavy whipping cream
- parsley chopped for garnish
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned.
- Add the diced onion, celery, and carrots and sauté until tender.
- Stir in the garlic and tomato paste and cook for 1 minute.
- Add Italian seasoning, crushed red pepper, ground black pepper, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add the drained beans and cook for another 10 minutes.
- Stir in the fresh spinach and heavy cream and heat through.
- Garnish with chopped parsley before serving.
Notes
- For a vegetarian version, omit the sausage and use vegetable broth
- You can also add kale instead of spinach for a heartier texture
