Description
This fresh and creamy Tzatziki Sauce is simple to prepare with cucumber, garlic, and Greek yogurt. Perfect as a dip or accompaniment for pita and grilled dishes. It’s a quick way to add authentic Greek flavor to your meals.

- 3/4 English cucumber partially peeled striped
- 1 tsp kosher salt divided
- 4 to 5 garlic cloves peeled finely grated or minced you start with 1 to 2 garlic cloves if you don’t want it to be too strong
- 1 tsp white vinegar
- 1 tbsp Early Harvest Greek Extra Virgin Olive Oil
- 2 cups plain Greek yogurt
- Handful of chopped fresh dill or mint optional
- 1/4 tsp ground white pepper
- Warm pita bread for serving
- Sliced vegetables for serving
Instructions
- Grate the cucumber using a box grater or pulse finely in a small food processor.
- Toss the grated cucumber with half a teaspoon of kosher salt and then wrap it in cheese cloth or a double layer of napkins to squeeze out excess liquid.
- In a large bowl, combine minced garlic with the remaining salt, white vinegar, and extra virgin olive oil and mix well.
- Add the drained cucumber into the bowl and stir in Greek yogurt, white pepper, and fresh herbs if desired, mixing thoroughly.
- Cover the bowl and chill the sauce for 30 minutes to 2 hours to thicken and let flavors meld.
- Before serving, stir the sauce to refresh it and optionally drizzle with more olive oil. Serve alongside warm pita bread and fresh vegetables.

- This recipe makes about 2 cups of tzatziki sauce
- For milder garlic flavor, start with fewer cloves and adjust to taste
