Description

Ingredients

  • 1/2 cup warm water
  • 1/3 cup fish sauce
  • 1/3 cup granulated sugar
  • 4 stalks lemongrass
  • 2 medium scallions thinly sliced about 1/4 cup
  • 2 tablespoons coarsely chopped garlic about 6 cloves
  • 1/2 teaspoon freshly ground white pepper
  • 2 pounds boneless skinless chicken thighs
  • 4 tablespoons neutral oil such as canola or vegetable divided for stovetop cooking
  • Steamed white rice
  • Steamed broccoli

Instructions

  1. Combine warm water, fish sauce, and sugar in a large container and stir until the sugar has completely dissolved.
  2. Prepare the lemongrass by peeling away the tough outer layers and discarding the ends, then crush the stalks to release their oils before chopping finely.
  3. Mix the chopped lemongrass, sliced scallions, chopped garlic, and ground white pepper into the marinade.
  4. Dry the chicken thighs, remove extra fat, cut each in half, then submerge the pieces in the marinade. Cover and chill for at least 12 hours or up to 24 hours.
  5. For pan-searing, heat half the oil in a nonstick skillet over medium-high heat, cook half the chicken until golden and done about 3 to 4 minutes per side, then repeat with remaining oil and chicken.
  6. Alternatively, preheat a grill to medium-high, clean grates, place the chicken pieces smooth side down spaced apart, cook until charred about 4 to 5 minutes, flip and continue cooking 3 to 5 minutes until cooked through.
  7. Let the cooked chicken rest for 5 minutes, slice into 1/2 inch pieces, and serve with steamed rice and broccoli if desired.
