Instructions

  1. Thoroughly wash the zucchinis and trim their ends, then grate them using a box grater or processor.
  2. Place the grated zucchini in a colander over a bowl, sprinkle with salt, and toss to coat. Let it rest for 10 to 15 minutes to draw out moisture.
  3. After resting, squeeze the zucchini firmly by hand or with a clean towel to remove excess liquid and avoid soggy fritters.
  4. In a large bowl, whisk together egg, gluten-free flour, Parmesan cheese if used, minced garlic, black pepper, and paprika until smooth.
  5. Add the drained zucchini and chopped parsley to the bowl and mix well to form a thick batter.
  6. Heat olive oil in a large skillet over medium heat until shimmering.
