This Zucchini Pizza Casserole is a delicious low carb pizza bake that combines fresh zucchini with ground beef and gooey cheese for an easy weeknight dinner. It is a family friendly casserole and perfect one dish dinner recipe featuring a healthy zucchini recipe.

- 4 cups zucchini shredded
- 1 teaspoon salt
- 2 large eggs
- 0.5 cup Parmesan cheese grated
- 2 cups mozzarella cheese shredded divided
- 1 cup cheddar cheese shredded
- 1 pound ground beef
- 1 small onion chopped
- 1 cup pizza sauce
- 1 green bell pepper chopped
- 1 cup mushrooms sliced
- 1 teaspoon dried oregano
- 0.5 teaspoon garlic powder
- 0.25 teaspoon black pepper
Instructions
- Preheat your oven to 400°F 200°C.
- In a large bowl, combine the shredded zucchini and salt and let sit for 10 minutes.
- Squeeze out as much moisture as possible from the zucchini using a clean kitchen towel or cheesecloth.
- Combine the drained zucchini, eggs, Parmesan cheese, and half of the mozzarella cheese and mix well to form the crust mixture.
- Grease a 9×13-inch baking dish and press the zucchini mixture evenly into the bottom to form the crust.
- Bake the crust for 20 minutes or until set and lightly browned.
- While baking, brown the ground beef with chopped onion in a skillet until no longer pink and drain excess fat.
- Stir in pizza sauce, green bell pepper, mushrooms, oregano, garlic powder, and black pepper and cook 5 minutes.
- Spread the beef mixture evenly over the baked zucchini crust.
- Sprinkle remaining mozzarella cheese and all cheddar cheese on top.
- Return casserole to oven and bake 20 minutes until cheese is melted and bubbly.
- Remove from oven and cool 10 minutes before serving.
Notes
- Zucchini can release a lot of water so ensure it’s well-drained to avoid a soggy crust
- Feel free to customize with your favorite pizza toppings like olives or pepperoni
