Ingredients

  • 1 pound ground Italian sausage I recommend spicy
  • 3 garlic cloves minced
  • 1 medium white onion peeled and diced
  • 1.5 pounds Yukon Gold potatoes diced
  • 5 to 6 cups chicken stock
  • 2 to 3 cups chopped fresh kale
  • 1 cup heavy whipping cream
  • fine sea salt and freshly-ground black pepper
  • 6 pieces bacon cooked and crumbled

Instructions

  1. Brown the sausage in a large pot over medium-high heat, breaking it into pieces and then remove it with a slotted spoon, keeping only 1 tablespoon of the grease in the pot.
  2. Sauté the onion in the reserved grease for 5 minutes then add the garlic and cook for another minute.
  3. Stir in the potatoes, chicken stock, and cooked sausage then bring to a simmer.
  4. Lower the heat and simmer until potatoes are tender, about 10 minutes.
  5. Mix in the kale and cream, cooking for 5 more minutes.
  6. Season to taste with salt and pepper and top with crumbled bacon before serving.
