- 1 pound ground Italian sausage I recommend spicy
- 3 garlic cloves minced
- 1 medium white onion peeled and diced
- 1.5 pounds Yukon Gold potatoes diced
- 5 to 6 cups chicken stock
- 2 to 3 cups chopped fresh kale
- 1 cup heavy whipping cream
- fine sea salt and freshly-ground black pepper
- 6 pieces bacon cooked and crumbled
Instructions
- Brown the sausage in a large pot over medium-high heat, breaking it into pieces and then remove it with a slotted spoon, keeping only 1 tablespoon of the grease in the pot.
- Sauté the onion in the reserved grease for 5 minutes then add the garlic and cook for another minute.
- Stir in the potatoes, chicken stock, and cooked sausage then bring to a simmer.
- Lower the heat and simmer until potatoes are tender, about 10 minutes.
- Mix in the kale and cream, cooking for 5 more minutes.
- Season to taste with salt and pepper and top with crumbled bacon before serving.
