Description

Air Fryer Asparagus Lemon Parmesan is a delicious and easy dinner perfect for weeknight or family meals. Enjoy crispy roasted asparagus with bright lemon flavor and cheesy parmesan in every bite. This parmesan asparagus air fryer recipe is quick to prepare and full of fresh taste.


Ingredients

  • 1 lb. fresh asparagus trimmed and cut diagonally into 2 inch pieces
  • 1 T olive oil
  • salt and fresh ground pepper to taste
  • zest of one lemon
  • juice of one lemon
  • 1/4 cup coarsely-grated Parmesan cheese

Instructions

  1. If needed, rinse the asparagus and dry it thoroughly.
  2. Snap one asparagus piece to find where the tough part ends, then trim all asparagus to that length and cut into 2 inch diagonal pieces.
  3. Coat the asparagus with olive oil, season with salt and black pepper, and place in the air fryer basket.
  4. Preheat the air fryer to 400F or 200C if necessary, then cook the asparagus for 7 minutes, checking for preferred crispness starting at 5 minutes.
  5. While cooking, prepare the lemon zest, lemon juice, and freshly grated Parmesan.
  6. Once the asparagus is done and slightly browned, toss it with the lemon zest and juice.
  7. Arrange on a serving plate and top with Parmesan cheese before serving hot.

  • Be sure to zest the lemon before juicing it
  • Freeze any extra lemon juice if your lemon is very juicy
