Description

Air Fryer Caprese Chicken Mozzarella is a quick and delicious meal perfect for an easy dinner or weeknight dinner. This caprese chicken recipe features juicy chicken topped with melted mozzarella chicken and fresh tomato. It’s a family dinner everyone will enjoy.


Ingredients

  • 1 chicken breast
  • 2 teaspoons olive oil
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tomato roma or campari sliced
  • 2 Tablespoons shredded mozzarella
  • 4 teaspoons shredded mozzarella
  • fresh basil leaves

Instructions

  1. Dry the chicken breast and slice it in half to create two thinner pieces for faster cooking.
  2. Brush olive oil over both chicken pieces and season with salt and pepper.
  3. Place the chicken in the air fryer and layer 1 Tablespoon shredded mozzarella on each piece.
  4. Arrange tomato slices over the cheese, then sprinkle another 2 teaspoons mozzarella on top.
  5. Cook the chicken in the air fryer at 400 degrees F for 15 minutes or until the internal temperature reaches 165 degrees F.
  6. Remove the chicken from the air fryer and garnish with fresh basil leaves before serving.

  • All air fryers cook differently and cooking times may differ based on the thickness of your chicken breast
  • Use a meat thermometer to ensure the chicken reaches an internal temperature of 165 degrees F
  • For less cooked cheese and tomatoes, air fry the chicken for 5 minutes first, then add the cheese and tomato slices and continue cooking
