- 2 large chicken breasts
- 2 eggs
- ⅓ cup gluten free breadcrumbs
- ½ cup grated parmesan cheese
- ¾ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat the air fryer to 380 Fahrenheit.
- Slice each chicken breast horizontally to create four thin pieces in total.
- Beat the eggs thoroughly in a shallow dish.
- Combine breadcrumbs, parmesan, salt, pepper, and spices in another shallow bowl.
- Coat each chicken piece first by dipping into the egg, then fully covering with the breadcrumb mixture.
- Arrange the coated chicken pieces in a single layer inside the air fryer basket, cooking in batches if necessary.
- Lightly spray or brush the chicken with olive oil.
- Cook in the air fryer for 15 minutes, flipping the pieces halfway through until the internal temperature reaches 165 Fahrenheit.
- Serve with your favorite pasta, salads, vegetables, or rice.
Notes
- I of course used gluten free breadcrumbs but if you are not gluten free regular breadcrumbs are fine
- I suggest plain – not Italian- since we’re adding our own seasoning
