  • 1.5 lb boneless skinless chicken breast cut into 1-inch cubes
  • 2 bell peppers red or yellow or orange
  • 2 small zucchini
  • ½ red onion large
  • 3 tablespoon olive oil
  • 3 tablespoon red wine vinegar
  • 3 garlic cloves minced
  • 1.5 teaspoon salt kosher or Himalayan pink salt
  • ¼ tsp ground black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil leaves

Instructions

  1. Combine olive oil, red wine vinegar, minced garlic, oregano, basil, thyme, onion powder, salt, and black pepper in a large bowl to form the marinade.
  2. Toss the chicken cubes in the marinade until evenly coated.
  3. Cut zucchini into ½ inch coins and bell peppers and onion into 1-inch pieces ensuring uniform size for even cooking.
  4. Add the veggies to the chicken in the bowl and stir to coat everything with the marinade.
  5. Refrigerate the mixture for at least 30 minutes or up to 24 hours to marinate well.
  6. Thread chicken and veggies onto skewers, placing about 3-4 chicken pieces per stick and starting and ending with bell pepper pieces.
  7. Preheat the air fryer to 370 degrees Fahrenheit for a few minutes.
  8. Arrange 4-5 skewers in a single layer in the air fryer basket without crowding for even browning.
  9. Air fry the kabobs for 12-15 minutes, turning them once after 7 minutes, until the chicken reaches an internal temperature of 160 degrees Fahrenheit.
  10. Repeat the air frying process for the remaining skewers and serve hot.
