Description

Air Fryer Chicken Pesto Sheet Pan is a quick and tasty way to enjoy a family dinner with crispy air fryer chicken topped with flavorful pesto. Perfect for an easy dinner or weeknight dinner, this pesto chicken recipe will satisfy everyone.


Ingredients

  • 2 boneless skinless chicken breasts
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 4 tablespoons Maika’i Basil Pesto
  • 4 slices mozzarella cheese
  • 1 to mato sliced

Instructions

  1. Warm your air fryer to 380F.
  2. Place the chicken breasts on a board and cover with plastic wrap, then flatten them evenly using a meat pounder or rolling pin.
  3. Sprinkle salt and pepper on both sides of the chicken.
  4. Lightly spray the air fryer basket to prevent sticking, then position the chicken breasts with the top side facing down and cook for 6 to 8 minutes.
  5. Take the chicken out and flip it onto a clean plate, keeping the air fryer basket closed to maintain heat.
  6. Spread Maika’i Basil Pesto over the chicken, layer mozzarella cheese on top, and finish with tomato slices.
  7. Return the chicken to the air fryer and cook for an additional 6 to 8 minutes until the chicken reaches an internal temperature of 165F.
  8. Remove from the air fryer and serve with your preferred side dishes.

Notes

  • This recipe can be prepared in the oven as well
  • Season both sides of the chicken with salt and pepper
  • For thick chicken breasts, butterfly them before pounding by slicing them horizontally and opening like a book
  • Avoid overcrowding your air fryer to ensure even cooking
