Air Fryer Chicken Souvlaki Skewers offer juicy, golden chicken with bright lemon herb flavor. Perfect for an easy dinner or family dinner any weeknight. This air fryer chicken recipe is quick and flavorful for satisfying meals.

- 450 g (1 ½ cups) strained Greek Yogurt full fat
- 1 large cucumber seeds removed
- 2 tsp salt
- 2 garlic cloves minced
- 1 tbsp fresh mint very finely diced
- ½ tbsp fresh dill chopped
- 1 tbsp lemon juice
- 1 tbsp olive oil to drizzle
- 900 g (2 pounds) skinless chicken thighs or pork shoulder steaks
- 2 tbsp olive oil
- 1 tbsp lemon zest
- ½ tbsp red wine vinegar
- 1 tbsp dried oregano
- 1 tbsp garlic and herb seasoning
- 1 tsp salt
- ½ tsp sweet paprika
- ½ tsp ground cumin
- red onion sliced very thinly
- flat leaf parsley finely chopped
- smoked sweet paprika to dust
- large vine tomatoes sliced thinly

Instructions
- Grate the cucumber coarsely and sprinkle it with salt, then let it rest for 5 minutes before squeezing out the excess moisture thoroughly.
- Combine the drained cucumber with yogurt, minced garlic, finely chopped mint, dill, lemon juice, and drizzle with olive oil, then chill in the fridge to develop flavors.
- Cut the chicken thighs into bite-sized pieces removing any large fat pieces, then mix with olive oil, lemon zest, red wine vinegar, dried oregano, garlic and herb seasoning, salt, paprika, and cumin. Cover the chicken and leave it to marinate in the fridge for at least 30 minutes.
- Thread the marinated chicken pieces onto skewers, then preheat your air fryer to 190°C (375°F) for 3 minutes.
- Place the skewers in the air fryer rack and cook for 10 minutes, turning them halfway through to ensure even cooking.
- Toss sliced red onion with chopped parsley, then warm the pita breads briefly in a pan.
- Assemble the souvlaki by layering pita with onion-parsley mix, tzatziki, sliced tomatoes, and the cooked chicken pieces dusted with smoked paprika. Wrap and serve immediately.
