  • 8 small 6-inch corn tortillas
  • 1/4 cup cream cheese softened
  • 1 cup shredded Mexican cheese blend
  • 1 packet taco seasoning
  • 2 cups cooked and finely shredded chicken breast
  • 1 tablespoon olive oil

Instructions

  1. Soften the corn tortillas by gently warming them in a dry skillet for about 10-15 seconds on each side or microwaving them stacked with a damp towel for roughly 20 seconds.
  2. In a bowl, blend the softened cream cheese until creamy, then stir in the shredded Mexican cheese, taco seasoning, and shredded chicken until the mixture is smooth and cohesive.
  3. Lay each tortilla flat, add about 1/4 cup of the chicken mixture along one side, then fold it in half to form a pocket, securing the edge with a toothpick.
  4. Heat the air fryer to 375°F. Brush both sides of each folded taco with olive oil.
  5. Arrange the tacos in a single layer in the air fryer basket, cooking in batches if needed.
  6. Cook for 6 to 8 minutes, flipping halfway, until the tacos turn golden and crisp.
