  • 1 pound cod filets cut into strips about 23 filets
  • 2 Tablespoon lime juice
  • 1 teaspoon avocado oil
  • 1/4 cup cornmeal or whole wheat bread crumbs
  • 1/2 teaspoon ancho chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/2 salt
  • oil spray
  • 1/2 cup light sour cream or plain whole milk Greek yogurt
  • 2 Tablespoons lime juice
  • 1/4 teaspoon ancho chili powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 12 cup chopped red cabbage
  • 1/2 cup chopped fresh cilantro
  • 6 medium whole wheat flour or corn tortillas
  • 1 cup shredded cheese
  • drizzle hot sauce optional
  • extra fresh cilantro

Instructions

  1. Slice the cod filets into strips and place them in a glass dish to prepare.
  2. Brush each fish strip with lime juice and avocado oil, then set them aside to marinate.
  3. Combine cornmeal, chili powder, cumin, garlic powder, and salt in a shallow bowl for coating.
  4. Spray the air fryer basket with oil and preheat it to 390 degrees F.
  5. Coat each fish strip thoroughly in the cornmeal mixture, allowing excess marinade to drip off.
  6. Lay 5 to 6 strips in the air fryer basket and cook for 8 to 10 minutes without flipping to keep the breading intact.
  7. Prepare the slaw by mixing sour cream, lime juice, chili powder, cumin, salt, and pepper in a bowl, then fold in the cabbage and cilantro.
  8. Warm the tortillas on the stovetop and assemble tacos by layering crispy fish, cabbage slaw, cheese, extra cilantro, and optional hot sauce. Serve and enjoy!
