Ingredients

  • 1 pound boneless skinless chicken thighs or chicken breast
  • ½ cup Greek yogurt
  • ½ lemon
  • 1.5 teaspoons dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tomatoes roma or campari
  • ½ cup diced cucumber English or Persian seedless cucumber
  • ¼ red onion peeled and thinly sliced
  • 2 Tablespoons olive oil
  • 2 Tablespoons red wine vinegar
  • salt
  • pepper
  • 1 Tablespoon Feta cheese crumbled
  • ½ cup Moroccan couscous
  • ½ cup water

Instructions

  1. Combine Greek yogurt, lemon juice, oregano, garlic powder, salt, and pepper in a bowl to create the marinade.
  2. Dry the chicken, slice if using breast, then coat it thoroughly in the marinade and cover, allowing it to sit for 30 minutes.
  3. Chop the tomatoes, cucumber, and red onion; toss with olive oil, red wine vinegar, salt, and pepper; let this mixture sit and marinate for at least 15 minutes, stirring occasionally.
  4. Place couscous in a heatproof bowl and pour boiling water over it; cover and leave for 10 minutes before fluffing with a fork.
  5. Preheat the air fryer to 400 degrees F for 5 minutes, then cook the chicken for 13 to 16 minutes until done; allow it to rest for 5 minutes once removed.
  6. Assemble the bowl by layering couscous, tomato cucumber salad, and sliced chicken; sprinkle feta cheese on top before serving.
