- 1 lb raw shrimp deveined and peeled
- 1 tablespoon olive oil
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon chili powder
- Salt and black pepper to taste
- ½ cup plain Greek yogurt
- Juice of 1 medium lime
- ¼ cup cilantro
- ¼ cup feta cheese
- 4 cups bagged coleslaw mix
- 8 6 inch tortillas
- 1 medium avocado mashed
- ½ cup feta cheese crumbled or cotija cheese
- ½ cup cherry tomatoes halved
- 1 lime sliced into wedges
Instructions
- Combine the shrimp with olive oil and spices in a large bowl and toss until the shrimp are evenly coated.
- Lay the shrimp in a single layer in the air fryer basket and cook at 400F for 6-8 minutes until opaque and cooked through.
- While the shrimp cooks, blend Greek yogurt, cilantro, feta cheese, and lime juice until creamy and well mixed to create the dressing.
- Place the coleslaw mix in a bowl and mix with half of the dressing, reserving the rest for serving.
- Optionally warm the tortillas by wrapping them in foil and heating in the oven at 350F for 10 minutes.
- Assemble each taco by spreading mashed avocado on the tortilla, topping with dressed slaw, cooked shrimp, cherry tomatoes, and crumbled feta. Finish by drizzling extra dressing on top and adding a lime wedge.
