Description

Air Fryer Shrimp Tacos Cilantro Lime offer a quick and tasty meal, featuring crispy air fryer shrimp paired with a fresh cilantro lime salad. Perfect for an easy dinner or weeknight dinner the whole family will enjoy. Enjoy vibrant flavors in every bite.


Ingredients

  • 1 lb raw shrimp deveined and peeled
  • 1 tablespoon olive oil
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • Salt and black pepper to taste
  • ½ cup plain Greek yogurt
  • Juice of 1 medium lime
  • ¼ cup cilantro
  • ¼ cup feta cheese
  • 4 cups bagged coleslaw mix
  • 8 6 inch tortillas
  • 1 medium avocado mashed
  • ½ cup feta cheese crumbled or cotija cheese
  • ½ cup cherry tomatoes halved
  • 1 lime sliced into wedges

Instructions

  1. Combine the shrimp with olive oil and spices in a large bowl and toss until the shrimp are evenly coated.
  2. Lay the shrimp in a single layer in the air fryer basket and cook at 400F for 6-8 minutes until opaque and cooked through.
  3. While the shrimp cooks, blend Greek yogurt, cilantro, feta cheese, and lime juice until creamy and well mixed to create the dressing.
  4. Place the coleslaw mix in a bowl and mix with half of the dressing, reserving the rest for serving.
  5. Optionally warm the tortillas by wrapping them in foil and heating in the oven at 350F for 10 minutes.
  6. Assemble each taco by spreading mashed avocado on the tortilla, topping with dressed slaw, cooked shrimp, cherry tomatoes, and crumbled feta. Finish by drizzling extra dressing on top and adding a lime wedge.
