- 4 large bell peppers
- 1 tablespoon olive oil
- 1 small onion diced
- 1 pound lean ground beef
- 3 garlic cloves minced
- 1 (15–ounce) can no salt added tomato sauce
- 2 teaspoons Italian seasoning divided
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 cup cooked rice
- 1 cup shredded mozzarella cheese
Instructions
- Cut off the tops of the bell peppers and dice these tops separately, then remove the seeds from the whole peppers.
- Heat olive oil in a skillet over medium-high heat, cook the diced onion and pepper tops until softened and browned, about 6 to 7 minutes.
- Add the ground beef and brown it thoroughly, breaking it apart as it cooks.
- Stir in garlic and cook for 1 minute until fragrant.
- Pour in the tomato sauce, 1½ teaspoons Italian seasoning, paprika, salt, and pepper, bring to a gentle boil and keep cooking until the sauce thickens, about 5 minutes with occasional stirring.
- Remove from heat and mix in the cooked rice.
- Preheat the air fryer to 360°F for 5 minutes.
- Fill each bell pepper with 1 to 1¼ cups of the beef and rice mixture, pressing it in firmly.
- Place the stuffed peppers in the air fryer basket and cook for 10 minutes.
- Open the air fryer, sprinkle the tops with mozzarella cheese and the remaining ½ teaspoon of Italian seasoning, then cook for another 2 minutes until the cheese is bubbly and browned.
Notes
- Store any leftovers in an airtight container for 3 to 4 days
- Reheat by air frying at 350°F for 5 minutes or microwaving for a few minutes
