Ingredients

  • 1 pound 93% ground turkey
  • 1/4 cup ketchup plus 2 tablespoons for topping
  • 1/3 cup quick rolled oats
  • 1/3 cup minced onion
  • 1/3 cup grated zucchini squeezed well
  • 1 large egg beaten
  • 1 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • optional minced parsley for garnish

Instructions

  1. In a medium bowl, thoroughly mix the ground turkey, oats, zucchini, onion, 1/4 cup ketchup, beaten egg, salt, and black pepper until combined.
  2. Shape the mixture into four equal mini meatloaves.
  3. Place the mini loaves in the air fryer basket and cook at 350F for 15 minutes.
  4. Flip each meatloaf, spread the remaining ketchup on top, and cook for an additional 5 minutes until fully cooked inside.
  5. Garnish with minced parsley if you like and serve.

Notes

  • To reduce sugar, swap regular ketchup with a sugar-free brand such as Primal Kitchen
  • If you don’t own an air fryer, you can bake the meatloaf on a sheet pan at 425F for 30 minutes as an alternative
