- 1 pound 93% ground turkey
- 1/4 cup ketchup plus 2 tablespoons for topping
- 1/3 cup quick rolled oats
- 1/3 cup minced onion
- 1/3 cup grated zucchini squeezed well
- 1 large egg beaten
- 1 teaspoon kosher salt
- 1/8 teaspoon black pepper
- optional minced parsley for garnish
Instructions
- In a medium bowl, thoroughly mix the ground turkey, oats, zucchini, onion, 1/4 cup ketchup, beaten egg, salt, and black pepper until combined.
- Shape the mixture into four equal mini meatloaves.
- Place the mini loaves in the air fryer basket and cook at 350F for 15 minutes.
- Flip each meatloaf, spread the remaining ketchup on top, and cook for an additional 5 minutes until fully cooked inside.
- Garnish with minced parsley if you like and serve.
Notes
- To reduce sugar, swap regular ketchup with a sugar-free brand such as Primal Kitchen
- If you don’t own an air fryer, you can bake the meatloaf on a sheet pan at 425F for 30 minutes as an alternative
