- 8 oz boneless skinless chicken breast cut into small pieces
- 1 head butter lettuce leaves washed
- 1/4 cup Primal Kitchen Foods BBQ Sauce
- 1/4 cup diced red onion
- 2 tbs chopped cilantro
- 1/2 medium avocado
- 1 tbs avocado oil
- 1 tsp garlic powder
- 1 tsp onion powder
- salt and pepper to taste
- optional black beans and corn
Instructions
- Warm the avocado oil in a large skillet over medium heat.
- Add the diced chicken to the skillet and season with garlic powder, onion powder, salt, and pepper. Cook until the chicken is fully cooked and no longer pink inside.
- Remove the chicken from the heat and transfer it to a bowl.
- Stir BBQ sauce into the cooked chicken until it is evenly coated.
- Arrange butter lettuce leaves on a serving plate.
- Spoon the BBQ chicken onto each lettuce leaf and top with diced red onion, cilantro, and sliced avocado.
- If desired, add black beans and corn to each wrap and drizzle with a little ranch dressing.
