Ingredients

  • 1/2 medium head cabbage (1 1/2 to 1 3/4 pounds) preferably green
  • 1 medium shallot
  • 3 to 4 large cloves garlic
  • 6 tablespoons (3/4 stick) unsalted butter
  • 1/2 teaspoon kosher salt plus more for the pasta water
  • 1/4 teaspoon freshly ground black pepper plus more as needed
  • 8 ounces dried rigatoni or penne or fusilli pasta
  • 1 small bunch fresh chives
  • 2 ounces Parmesan cheese plus more for serving

Instructions

  1. Remove the cabbage core and slice the cabbage thinly, then peel and slice the shallot and mince the garlic.
  2. Heat butter in a large pot over medium heat and soften the shallot for about 5 minutes, then add garlic and cook until fragrant for roughly 1 minute.
  3. Stir in the cabbage and season with salt and pepper, cooking on medium to medium-low heat until the cabbage turns tender and deeply golden, about 20 to 25 minutes, stirring occasionally.
  4. While cabbage cooks, bring salted water to a boil and cook pasta according to package directions until al dente; reserve some pasta water and drain.
  5. Slice chives thinly and grate Parmesan cheese finely.
  6. Combine the cooked pasta with the cabbage and Parmesan in the pot, add reserved pasta water gradually, and toss over medium heat until a smooth sauce forms.
  7. Stir in the chives and adjust seasoning with salt and pepper as needed, then serve topped with extra Parmesan cheese if desired.
