- 1 Tablespoon salted butter
- 1 teaspoon olive oil
- 2 pounds chicken breast cut into 1-inch pieces
- 2 teaspoons minced garlic
- ¾ cup chicken stock
- ¼ cup low sodium soy sauce
- 3 Tablespoons hoisin sauce
- 1 ½ Tablespoon rice vinegar
- 2 Tablespoons corn starch
- ¾ cup unsalted cashews
- salt and pepper to taste
- For serving lettuce cups or butter lettuce sliced green onions
Instructions
- Warm the butter and olive oil in a large skillet over medium heat until the butter melts.
- Arrange chicken pieces in a single layer and season them with salt and pepper.
- Let the chicken cook undisturbed for 3 minutes to brown, then turn each piece and cook for another 3 minutes until golden.
- Reduce the heat to low and mix in the garlic; cook briefly until fragrant.
- In a small bowl, combine chicken stock, soy sauce, hoisin sauce, rice vinegar, and corn starch; whisk until smooth.
- Pour the sauce mixture into the skillet with the chicken and simmer over low heat until the sauce thickens.
- Stir in the cashews and cook briefly to combine.
- Serve the chicken mixture inside lettuce cups or over rice and garnish with sliced green onions if you like.
Notes
- For a little heat, add a few dashes of hot sauce or sriracha to the sauce
