Ingredients

  • 1 tablespoon of olive oil
  • ¾ cup of yellow onion chopped
  • 1 pound of lean ground beef
  • 2 cloves of garlic minced
  • Kosher salt and freshly ground cracked black pepper to taste
  • 2 tablespoons of taco seasoning
  • ½ cup of diced tomatoes
  • ½ cup of beef broth
  • 12 Romaine lettuce leaves doubled up for serving
  • ⅓ cup of reduced-fat cheddar cheese
  • ⅓ cup of red onions finely sliced
  • ⅓ cup of avocados diced
  • ⅓ cup of sweet peppers diced
  • 2 tablespoons of cilantro finely chopped
  • 6 tablespoons of light sour cream

Instructions

  1. Warm the olive oil in a skillet over medium-high heat.
  2. Add the chopped onion and cook for 2 minutes until softened.
  3. Introduce the ground beef and garlic to the pan, seasoning with salt and pepper.
  4. Cook the beef, stirring frequently to break it up, until fully browned, about 5 minutes.
  5. Pour in the taco seasoning, diced tomatoes, and beef broth, mixing well.
  6. Lower the heat and let the mixture simmer gently for around 5 minutes until thickened.
  7. Spoon the cooked beef mixture onto the lettuce leaves and add your preferred toppings.
