Ingredients

  • 2 chicken breasts raw
  • 1 cup orzo raw
  • 1 onion diced
  • 2 carrots peeled and diced
  • 2 ribs celery diced
  • 4 cloves garlic minced
  • 6 cups chicken broth plus more as needed
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1 teaspoon lemon zest
  • 1 lemon juiced
  • 2 cups spinach finely chopped

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté onion, carrot, and celery for about 3 to 4 minutes until softened, then add garlic and cook for one more minute until fragrant.
  3. Stir in dried oregano, parsley, basil, dill, and salt; heat the mixture for 30 seconds.
  4. Pour in the chicken broth and mix with the vegetables, then place the raw chicken breasts into the pot, making sure they are covered by the broth.
  5. Bring the soup to a gentle boil, then lower the heat to simmer and cook the chicken for 15 minutes.
  6. Add the orzo to the simmering pot and stir well, cooking for an additional 10 minutes.
  7. Remove chicken breasts, shred them using forks, and continue simmering the soup.
  8. Return the shredded chicken to the soup along with chopped spinach, lemon zest, and lemon juice; cook on low for 5 minutes until the spinach wilts.
  9. Taste the soup and adjust seasoning if needed, adding extra broth or water if the soup feels too thick.
  10. Serve the soup immediately or store it in the fridge for 3-5 days or freeze up to 3 months.
