- 1 cup orzo raw

- 2 carrots peeled and diced
- 2 ribs celery diced
- 4 cloves garlic minced
- 6 cups chicken broth plus more as needed
- 2 tablespoons olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried dill
- 1/2 teaspoon salt
- 1 teaspoon lemon zest
- 1 lemon juiced
- 2 cups spinach finely chopped
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Sauté onion, carrot, and celery for about 3 to 4 minutes until softened, then add garlic and cook for one more minute until fragrant.
- Stir in dried oregano, parsley, basil, dill, and salt; heat the mixture for 30 seconds.
- Pour in the chicken broth and mix with the vegetables, then place the raw chicken breasts into the pot, making sure they are covered by the broth.
- Bring the soup to a gentle boil, then lower the heat to simmer and cook the chicken for 15 minutes.
- Add the orzo to the simmering pot and stir well, cooking for an additional 10 minutes.
- Remove chicken breasts, shred them using forks, and continue simmering the soup.
- Return the shredded chicken to the soup along with chopped spinach, lemon zest, and lemon juice; cook on low for 5 minutes until the spinach wilts.
- Taste the soup and adjust seasoning if needed, adding extra broth or water if the soup feels too thick.
- Serve the soup immediately or store it in the fridge for 3-5 days or freeze up to 3 months.
