This Keto Chicken Casserole Broccoli Cheese is perfect for an easy dinner or a weeknight dinner. Enjoy a creamy chicken broccoli casserole that’s family friendly and low carb. It’s quick to prepare and flavorful.


Ingredients

  • 20 ounces fresh broccoli florets
  • 8 ounces cream cheese room temperature
  • ¼ cup mayonnaise
  • 1 cup freshly grated cheddar cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt
  • 2 cups cooked chopped chicken
  • ¼ cup grated Parmesan

Instructions

  1. Set your oven to 350 degrees to preheat.
  2. Put broccoli in a large microwave-safe bowl with 2 tablespoons water, cover with plastic wrap tightly, then microwave for 2 minutes and let it rest covered for another 2 minutes.
  3. Remove plastic wrap carefully and pour out any excess liquid.
  4. In a small bowl, combine cream cheese, mayonnaise, cheddar cheese, garlic powder, salt, and pepper until well mixed.
  5. Fold the cream cheese mix and chicken into the steamed broccoli until fully combined.
  6. Spread the mixture evenly in a 9×13 inch baking dish and sprinkle Parmesan cheese on top.
  7. Bake in the oven for 15 minutes until heated through and cheese is melted.
