- 2 cup Leftover Chicken shredded
- 1 Egg beaten
- ½ cup Golden Breadcrumbs
- ½ cup Panko Breadcrumbs
- ½ tsp Salt
- ½ tsp Black Pepper
- 1 tsp Paprika
- ½ tsp Chilli Powder
- 2 tbsp Butter
- 2 heaped tbsp Plain Flour
- 1 cup Milk
- ⅓ cup Grated Cheese
- ½ tsp Garlic Powder
- ½ cube Chicken Bouillon
- ½ Onion diced
- 2 tbsp Fresh Coriander Leaves chopped
Instructions
- Heat butter in a saucepan on medium and blend in the flour until it forms a smooth base.
- Gradually stir in the milk and keep stirring for about five minutes until the mixture thickens.
- Add grated cheese and season with salt, black pepper, paprika, chilli powder, garlic powder, and crumbled bouillon cube.
- Remove the pot from heat and fold in shredded chicken, diced onion, and chopped coriander. Let the mixture cool.
- Combine golden and Panko breadcrumbs in a shallow dish and put the beaten egg in a separate bowl.
- Shape spoonfuls of the chicken mixture into balls, dip them into the egg, then coat evenly with breadcrumbs. Repeat with all the mixture.
- Preheat the air fryer to 200 degree Celsius and lightly oil the basket.
- Arrange the croquettes in the basket and brush them with oil; cook for five minutes.
- Turn the croquettes, brush oil again, and cook for an additional five minutes until they turn golden.
- Let them rest briefly before serving.
