- 6 strips bacon cut in 1/2 inch wide pieces about 1/3 lb
- 1 pound Brussels sprouts trimmed and halved
- 8 ounce bow-tie pasta
- 1/2 cup cream or half-and-half
- 3/4 teaspoon kosher salt
- 1/2 teaspoon fresh ground black pepper
- 1/2 cup Asiago or Parmesan cheese shredded optional
Instructions
- Heat a large pot of water until it boils and start prepping bacon and Brussels sprouts.
- Cook pasta for about 12 minutes until tender but firm.
- Warm a skillet over medium-high heat and put in bacon to cook for 2 minutes.
- Add Brussels sprouts and stir occasionally for 8 to 10 minutes until bacon is done and sprouts are browned.
- Remove bacon and sprouts onto a plate and drain all but a teaspoon of fat from skillet.
- Place skillet back on heat and carefully add half a cup of pasta water, scraping pan to loosen browned bits.
- Mix in cream, salt, and pepper, then simmer sauce on medium for 1 to 2 minutes until it thickens.
- Drain pasta well, add it to the sauce, and stir well to coat.
- Return bacon and Brussels sprouts to skillet, combine everything, taste, and adjust salt if necessary.
- Sprinkle cheese on top before serving if you like and enjoy.
