- 1 cup fresh spinach chopped

- 1/4 cup red onion thinly sliced

- Black pepper to taste
Instructions
- Combine mozzarella, feta, chopped spinach, diced tomato, sliced red onion, and black pepper in a bowl until evenly mixed.
- Spread a quarter of the mixture onto half of a flour tortilla then fold it over to enclose the filling.
- Warm a non-stick pan on medium heat and add olive oil to it.
- Place the folded tortilla in the skillet and cook each side about 3 to 4 minutes until crisp and golden brown.
- Take the quesadilla off heat, cut into wedges, and serve while hot.
