Protein Lasagna Roll Ups make an easy dinner that’s perfect for any weeknight or family gathering. These baked lasagna rolls offer a high protein pasta dinner option full of cheesy, hearty flavors everyone will enjoy.

- Kosher salt
- 8 lasagna noodles wheat or gluten-free
- 16 ounces 2% cottage cheese drained (I like Good Culture)
- ½ cup grated Parmesan cheese
- ¼ cup chopped fresh parsley
- 2 tablespoons prepared pesto
- 1 large egg
- Freshly ground black pepper
- 2 cups marinara plus more for serving
- ½ cup shredded part-skim mozzarella cheese (about 2 ounces)
- Chopped fresh basil or parsley for garnish
Instructions
- Heat your oven to 350F.
- Boil a large pot of salted water and cook the noodles until al dente following the package instructions. Drain and lay them flat on wax paper to avoid sticking.
- Mix together cottage cheese, Parmesan, parsley, pesto, egg, ¼ teaspoon kosher salt, and black pepper in a large bowl.
- Spread 1/3 cup of the cheese blend evenly over each noodle and roll them up tightly. Place rolls seam side down in a baking dish with marinara on the bottom.
- Pour remaining marinara over the rolls and sprinkle mozzarella on top. Cover with foil without touching the cheese.
- Bake for about 40 minutes until warmed through and cheese is melted.
- Serve garnished with fresh basil or parsley.

- For crisp tops, broil 2–3 minutes at the end
